Delicious Recipes for Diabetics


It is essential that diabetics should follow strict dietary habit. But they can also have delicious food. Here are some delicious recipies for diabetics:

Green Rava Pongal:
Ingredients: green gram dal- ½ cup, wheat rava (small variety) – 1 cup, any green – 1 cup, onion – 1, green chillies – 2, garlic – 6, cumin – ¼ tsp, pepper – 1/4tsp, milk – ¼ cup, ghee – 1 tsp, salt for taste.
Method: Wash green gram dal. After washing cut greens to small pieces. Boil 8 cups of water, add whole green gram and wheat rava. When it come to half boiling add 1 tsp ghee, salt, garlic, onion & green chillies. After this is cooked well, add milk and take it from the flame. Fry pepper and cumin seeds in ½ tsp oil and add. Tasty green rava pongal is ready to serve.

Dal toast:
Ingredients: Wheat bread – 5, green gram dal – ½ cup, ginger – 1 small piece, green chillies – 1, oil – 1tsp, green chutney – 1 tsp
Method: Soak green gram dal for ½ hour, Grind it with chilly, ginger and salt. Remove the sides of the bread and cut each bread slice into two. Now apply green chutney and apply the ground paste on both sides. Toast this in a non-stick pan with little oil. Dal toast is ready to serve.

Corn chat:
Ingredients: American corn – 1 cup, cumin powder – 1 tsp, pepper powder – ½ tsp, black salt – ½ tsp, chilly powder – ¼ tsp, lemon juice – 2 tsp, coriander leaves, salt to taste.
Method: Boil corn with salt. Add all the ingredients and serve. ( You can also add chat masala instead of cumin, pepper powder and rock salt)

Onion Buttermilk:
Ingredients: Curd – 1 cup, small onion – 5, green chilies – 1, coriander leaves, cumin powder – ½ tsp, salt for taste.
Method: Remove the skin from the onions and grind it with chilly. Now add curd, salt and water and grind it together. Add coriander leaves and serve.

Channa salad:
Ingredients: sprouted channa – 1 cup, coriander leaves, pepper powder – ½ tsp, cumin powder – ½ tsp, coriander powder – ¼ tsp, mango powder – 1 tsp, black salt – ¼ tsp and salt for taste.
Method: Soak sprouted channa for 4-5 hours. Add salt and boil it in pressure cooker. Add all the other ingredients and serve.

Clear soup:
Ingredients: carrot – 1, cabbage leaves – 2, beans – 6, cauliflower -3 pieces, sprouted green gram dal- 1 tsp, chillies – 1, ginger – 1 small piece, garlic – 4 pieces, soya sauce – 1 tsp, ajnamoto-1 tsp, salt to taste and coriander leaves.
Method: Cut carrot into round pieces. Cut all the vegetables into big pieces, Boil 4 cups of water. Add the cut vegetables to the boiling water, add finely cut ginger, chillies, garlic, sprouted gram dal, salt soya sauce and ajnamoto. Cook till the vegetables are boiled well, serve hot with vinegar or add 2 tsp of lime juice.

Some essential tips for diabetics:
- Eat small quantity of food at regular intervals. The gap between 2 meals should not be more than 4 hours.
- Both overeating and fasting should be strictly avoided.
- Drink 2 litres of water everyday.
- Do regular exercise for 45 minutes.
- If hungry in between meals, have clear soup, buttermilk, sprouted or vegetable salad, lime juice with salt, cucumber, papaya, rasam, tomato juice, herbal tea or black tea.
- Always have a chocolate or a sugar packet or a juice in your bag. While going out, if you feel like fainting , immediately eat any one of these.
